Do the log files get removed after a certain amount of time? What do these files look like?

Don't Worry, this is for a school task on Internet Privacy and security.

My experience with my N750DB router is that the log file contains info on who tries to connect to the router and when, not about the content of the info being served.

Log file entries simply drop off the bottom of the queue when the log file is full. They're simply text file entries.

If you're concerned about content, you should be looking at the log file of the serer, not the router.
